I broke down in a good way! I finally purchased the mythical Instant Pot. I stayed a way from it for a while because I felt like my slow cooker did a good enough job and having ANOTHER thing to sit on my already crowded kitchen counters seemed overwhelming.

Over time I saw interesting recipes on pinterest, heard stories about its magic and then realized what a breeze cooking certain things could be if I we’re to be cooking in someones house and doing their meal prep {shameless plug}.

And at that point for only $100 on Amazon … I couldn’t ignore it anymore.

The instant pot is an electric pressure cooker that self releases when your food is finished so there really is minimal guessing involved and lots of time saved. One of the first things I tried was cooking a whole organic chicken that I got on super sale at Whole Foods one day. I even tried this recipe in the morning before work just to see how majestic it was to cook something that used to be so daunting before 11 am.

This recipe shows you how to cook a whole chicken in 30 minutes using an instant pot.

Ingredients

  • 1 whole Roasting Chicken
  • 3 tbsp Butter Cut into slices
  • 2 tbsp Seasoning Blend I used Greek
  • 2 cups Chicken Stock Bone Broth or Water
  • Salt + Pepper to taste

Instructions

  • Begin by patting your chicken dry with paper towels and liberally seasoning it with spices. I used a greek and added turmeric, but any combination you like or even just salt and pepper will work well
  • Add seasoning under the skin while also adding one tablespoon of the sliced butter to moisten while cooking
  • Turn your instant pot to the Saute Mode and heat up the rest of the butter or oil of choice
  • Once butter or oil is heated up, place chicken breast side down in the bottom of the instant pot to sear for crispy skin and color. Repeat on other side is optional
  • Remove chicken and place instant pot steamer basket at the bottom, add 2 cups of preferred liquid and add the sauted chicken on top of the basket.
  • Close instant pot lid and set to manual high pressure at 25 minutes while making sure the valve is in the SEALING position
  • Once the time is up, let come to pressure naturally or push the valve to VENTING position
  • Take care in removing chicken and steamer basket as everything will still be hot! Let chicken rest 5 minutes and then dig in!
