This mango cucumber salsa is perfect to bring to your summer parties and perfect with cucumber chips for those on a Whole30 reset!
I am a self proclaimed chip addict. I can’t get enough of the salty crunch of a chip. It’s bad though because my husband and I are known to polish off a bag of pretty much anything in one sitting, especially if there is a good dip or salsa around.
This year I am taking more caution with my chip habit and I’m also making sure my dips are a little bit healthier so that I don’t feel as bad when going overboard. Plus, when you’re on a whole30, you can’t have ANY store bought chips so what do you do at summer bbqs and gatherings?
So, allow us to make it easy for you, and return to our Whole30 “real, whole, nutrient-dense” food roots: No store-bought chips. Period. Not even if they’re kale. Not even if they’re roasted. Not even if they’re cooked in coconut oil. Chips of any nature are counter to the Whole30 mission, they’re pushing more nutrient-dense food off your plate, and they’re all too easy to turn into food with no brakes.
It’s only 30 days, and you can do better.
Feel free to make your own real-food version at home; bake kale leaves, pan-fry plantain slices, or roast potato wedges. But please, no deep-frying. That should go without saying.

This mango cucumber salsa is made with only 5 ingredients and makes about 2.5 cups of goodness. It is tangy, sweet and refreshing and only requires the use of a sharp knife. Bonus, if there is any left over you can use it to top a salad and throw on some chicken, avocado and call it a day!
Mango Cucumber SalsaPrint
- 1 Mango, small diced
- 1 Cucumber, small diced
- 2 Limes, juiced
- 1/2 Red Onion, small diced
- 1 tsp Sea Salt
- 1/4 cup Cilantro, chopped
- Add all ingredients to a bowl and toss until fully combined.
- Flavors will be even better 30 minutes after tossing together
- Keeps for up to 3 days in the fridge
