I’ve always loved pumpkin pie.  In the last few years since the PSL craze has been upon us, I started to feel so basic because I enjoyed the flavor even though I was a fan all along.

At some point it was time to be true to myself and drown myself in all things pumpkin spice.  These no bake pumpkin pie bites made without gelatin, milk or any dairy definitely help.

🥧 How to Make No Bake Pumpkin Pie Bites

1️⃣In a stand mixer with a paddle attachment, add cashew butter, pumpkin puree, maple sugar, cinnamon and pumpkin pie spice and mix until fully combined being sure to scrape off the sides as you go.

2️⃣ Add coconut flour in 1 tbsp increments while continuing to mix until a dough is formed that is smooth but wont stick to your hands and can be rolled into balls. (this took me about 1/3 cup total)

3️⃣ In a small bowl add maple sugar and pumpkin pie spice and whisk together to roll the cake bites in.

4️⃣ Roll dough into 1″ balls and then coat in sugar/spice mixture to cover the surface.

5️⃣ Store in fridge for at least 2 hours in an air tight container to firm up.

6️⃣ Let them come to room temperature for 10 minutes before serving.

🥜 Best Nut Butter to Use

I used cashew for this because I really enjoy the creamy cashew flavor. Cashews are naturally sweeter than other nuts which could help you cut down on added sweetener or sugar.

Almond butter will also work for this recipe, but make sure it is not raw almond butter.  Roasted almond butter is more smooth, sweet and easier to work with.

🔀 Coconut Flour Substitutions

  • Coconut flour is great for this because it has more of a smooth texture with less flavor.  The amount of coconut flour you add will be different depending on how much moisture is in your nut butter.
  • I would not recommend using wheat flour for these no bake pumpkin pie bites as wheat flour without being cooked has an unpleasant taste.
  • Almond flour may be used however it is a bit drier and may require a nut butter that has a bit more of an oil content.

Are no-bake pumpkin pie bites a Whole30 compliant or Paleo dessert?

No bake pumpkin pie bites are not whole30 compliant as written below. However, you can eliminate the sweetener completely and it would be technically compliant though desserts on Whole30 are not really a thing. I recommend using cashew butter if you eliminate the sweetener as it is slightly more sweet than other nut butters.

How do I store no bake pumpkin pie bites?

No bake pumpkin pie bites also need some time to firm up in the fridge after they are formed. Make sure they are stored in an airtight container to keep them from drying out. Before serving, leave out for 20 minutes to make sure they come to room temperature.
