Horseradish Mashed Potatoes
These creamy horseradish mashed potatoes add a great kick to a classic side dish using prepared horseradish. This recipe can be made on the stovetop or in your instant pot.

- ¾ cup Whole Milk or Coconut Milk

- 2 tbsp Prepared Horseradish
½ tbsp Salt
- 1 tsp Ground Black Pepper
1 tsp Ground Black Pepper
Peel your potatoes (if you want to) and chop them into 2” pieces
Add them to a large pot and fill with water until it comes up to 1” above the potatoes. Add a pinch of salt to the water.
Boil the potatoes until they are fork tender but not completely mushy. This will take about 20 minutes.
Drain potatoes and add them back into the pot they cooked in.
Add ghee or butter, milk of choice, horseradish, pepper, salt, garlic powder and onion powder
For best results use a hand masher or a hand mixer making sure not to over mix. Over mixing can cause the potatoes to overdevelop their starches creating a gummy glue like texture.
