Horseradish Mashed Potatoes

These creamy horseradish mashed potatoes add a great kick to a classic side dish using prepared horseradish. This recipe can be made on the stovetop or in your instant pot.

Ingredients

  • 2 pounds Golden Potatoes

  • 3 tbsp Ghee or Butter

or Butter

  • ¾ cup Whole Milk or Coconut Milk

  • 2 tbsp Prepared Horseradish

Prepared Horseradish

  • ½ tbsp Salt

½ tbsp Salt

  • 1 tsp Ground Black Pepper

1 tsp Ground Black Pepper

  • 1 tbsp Garlic Powder

Garlic Powder

  • ½ tbsp Onion Powder

Instructions

  • Peel your potatoes (if you want to) and chop them into 2” pieces
  • Add them to a large pot and fill with water until it comes up to 1” above the potatoes. Add a pinch of salt to the water.
  • Boil the potatoes until they are fork tender but not completely mushy. This will take about 20 minutes.
  • Drain potatoes and add them back into the pot they cooked in.
  • Add ghee or butter, milk of choice, horseradish, pepper, salt, garlic powder and onion powder
  • For best results use a hand masher or a hand mixer making sure not to over mix. Over mixing can cause the potatoes to overdevelop their starches creating a gummy glue like texture.
  • Check your seasonings and adjust
  • Enjoy hot
