Air Fryer Acorn Squash

This air fryer acorn squash is the perfect way to eat seasonally during the Fall months where squash is in season. Great as a healthy fall side dish.

Ingredients

  • 1 Acorn Squash
  • 1 tablespoon Avocado Oil
  • 1 tsp Poultry Seasoning
  • Salt & Pepper to Taste

Instructions

  • Cut one acorn squash down the middle length wise. Scrape out the seeds with a spoon and discard them.
  • Slice the acorn squash into 1" thick slices.  As you get down to the smaller pieces, they may not be the same size, this is ok!
  • In a bowl, toss together acorn squash slices, avocado oil, poultry seasoning, salt and pepper.
  • Grease the bottom of your air fryer basket and add acorn slices in.  Do not overcrowd your air fryer basket.  The basket I use with the ninja foodi holds one sliced acorn squash without over crowding. 
  • Air fry at 375 for 15 minutes and serve hot. 

Notes

Can I Air Fry Delicata squash?  Delicata squash can be air fried in the same way.  If you make your slices thinner than 1" be sure to adjust cooking time and check on it after 10 minutes.
What else can I season Acorn Squash with? I used poultry seasoning to season this acorn squash because I think it is a game changing spice. However, you could season acorn squash with italian seasonings, greek seasonings, curry powder etc.
