Air Fryer Stuffed Mushrooms

This easy recipe for Air Fryer Stuffed Mushrooms uses baby portobello mushrooms and stuffs them with a paleo, keto and Whole30 compliant herbed filling. Cook up this healthy mushroom appetizer in 10 minutes or less using your air fryer or Ninja Foodi!

  • Preheat the air fryer to 375 degrees F.
  • While the air fryer is preheating, prepare the filling mixture. In a large bowl, mix together almond flour, minced sundried tomatoes, Italian seasoning, olive oil and salt and pepper until a thick paste is formed.
  • Gently remove the stems from the mushrooms and clean off any dirt with a very lightly dampened paper towel. Discard stems or use for another dish. Make sure the caps are completely clean and dry before moving on.
  • Evenly distribute the filling into the mushroom caps making sure not to overfill.
  • Place in a single layer in the preheated air fryer and cook for 8 minutes or until mushrooms are soft and filling is golden brown on the top.
  • Garnish with freshly chopped parsley and serve hot.

Notes

Oven-Baked Stuffed Mushrooms

No air fryer? That's okay. You can make stuffed mushrooms in the oven.
  1. Preheat oven to 400F.
  2. Place prepared mushrooms in a single layer on a baking sheet and bake for 15 to 20 minutes or until mushrooms are fork-tender and filling is golden brown and toasted.
  3. Sprinkle with fresh parsley and enjoy!

Storing, Freezing & Reheating

  • Storing: Store leftover air fryer stuffed mushrooms in an airtight container in the refrigerator for 2 to 3 days.
  • Freezing: is not recommended due to the high water content of mushrooms.
  • Reheating: To reheat, place them in the air fryer at 400 degrees for 4 to 5 minutes or until edges are browned and mushrooms are heated through.
