Citrus Pickled Turmeric

Equipment

  • 1 Mason Jar 16 oz
  • 1 Disposable Gloves pair

Ingredients

  • 1 cup turmeric sliced into 1/4 inch pieces
  • ½ cup lemon juice
  • ¼ cup lime juice
  • ¼ tsp sea salt

Instructions

  • Wash the turmeric root under cold water scrubbing off any impurities or dirt with a gentle brush.
  • Put on disposable gloves if necessary.
  • Peel the turmeric root using a vegetable peeler.
  • Using a sharp knife, slice the peeled turmeric into 1/4 inch slices and add them to your mason jar.
  • Juice the lemons and limes until you get about 3/4 cup juice. You may need more or less depending on the size of your turmeric slices.
  • Add a pinch of salt to the citrus juice and whisk together.
  • Pour the juice into the mason jar with the turmeric making sure it is fully covered.
  • Seal the jar with a lid, then place it in your fridge for one week. Make sure you shake it vigorously for 30 seconds each day.
  • Once one week is up, enjoy 2-3 slices before every meal for amazing health and digestive benefits.
