  • Preheat Your Gas Grill: Turn on your gas grill and heat it up until temperature stays around 350-400 degrees.
  • Prepare Your Zucchini: Wash zucchini and cut lengthwise into ¼” strips using a very sharp knife. You could also use a mandolin. You should be able to get 4-5 strips out of one medium zucchini.
  • Season Zucchini: Brush each zucchini strip on both sides with a light coat of olive oil. Once coated, sprinkle both sides with dried seasoning and lemon zest.
  • Grill Zucchini: Place zucchini on a preheated grill and cook on one side covered for 3 minutes. Flip and cook for another 3 minutes covered or until zucchini is cooked through but not mushy.
  • Serve: Remove from grill and add a squeeze of fresh lemon juice. Serve hot.

Foil Packet Instructions:

  • Place the seasoned zucchini on a large piece of aluminum foil and fold the edges to seal it into a packet. Place the packet on a preheated grill over medium heat and cook for about 15-20 minutes, turning once, until the zucchini is tender.

Notes

Storage Instructions: Place the slices in a single layer in an airtight container. To keep it from getting soggy, use parchment paper in between. Keep it refrigerated for up to 3-4 days.
Reheating instructions: To reheat grilled zucchini, preheat your oven to 350°F (175°C), spread the zucchini in a single layer on a baking sheet, and heat for 5-10 minutes or until warmed through.
