Everything Bagel Potato Salad

- 3 pounds red potatoes cut into 1" cubes
- 1 cup mayonnaise store-bought or homemade
- 1 cup celery diced
- ½ cup red onion diced
- 2 tablespoons dijon mustard
- 2 tablespoons everything bagel seasoning
Bring a large pot of water to a rolling boil over high heat. Add cubed potatoes. Bring water back to a boil and boil potatoes for 10 to 12 minutes or until fork-tender (soft to the touch but not mushy).
Once the potatoes are cooked through, drain them in a colander under running cold water to keep them from cooking any further.
In a large glass bowl, add mayo, dijon and everything bagel seasoning. Whisk together until smooth and creamy.
To the bowl with the salad dressing, add chopped onions and celery. Stir well. Lastly, fold in cooled potatoes. Toss everything together until the potatoes and veggies are evenly distributed and evenly coated in dressing. Season to taste with salt and pepper.
Cover the bowl with plastic wrap and let chill in the fridge for at least 30 minutes. Before serving, give the potato salad another toss. Sprinkle with everything bagel seasoning as garnish (optional) and serve.
