  • Prepare the chicken: Trim any excess fat from the chicken breast and pat dry with a paper towel on both sides. Use a sharp knife to cut the chicken into 1.5-inch pieces.
  • Assemble the Greek marinade: Add the Greek yogurt, lemon juice, red wine vinegar, and dried seasonings into a medium-sized mixing bowl. Whisk to fully combine.
  • Marinate the chicken: Add the diced chicken breast into the marinade and toss to coat. Cover the bowl and let marinate for at least 30 minutes or up to 24 hours.
  • Air fry Greek chicken: Preheat the air fryer to 375°F (190°C) for 3-5 minutes. Shake off any excess marinade, and add to the air fryer. Cook for 15-20 minutes, flipping halfway or until the chicken is cooked through and tender. Serve hot over rice, in a pita, or in a Greek salad with feta cheese. Enjoy!

Notes

Storage Instructions: Cool the Greek chicken bites to room temperature, then put them in an airtight container. They will stay good in the fridge for 3 to 4 days. Lay them flat or use parchment paper between layers to keep them from sticking. 
Freezing Instructions: After cooking, cool the chicken bites and spread them on a tray to freeze until solid, so they don’t stick together. Then, put them in a freezer bag or container, remove the air, and freeze. They can be kept for up to 3 months. Thaw them in the fridge overnight or reheat straight from frozen in the air fryer until hot.
