2️⃣Assemble the Greek marinade: Add the Greek yogurt, lemon juice, red wine vinegar, and dried seasonings into a medium-sized mixing bowl. Whisk to fully combine.

3️⃣Marinate the chicken: Add the diced chicken breast into the marinade and toss to coat. Cover the bowl and let marinate for at least 30 minutes or up to 24 hours. 

4️⃣Air fry Greek chicken: Preheat the air fryer to 375°F (190°C) for 3-5 minutes. Shake off any excess marinade, and add to the air fryer. Storage Instructions: Cool the Greek chicken bites to room temperature, then put them in an airtight container. They will stay good in the fridge for 3 to 4 days. Lay them flat or use parchment paper between layers to keep them from sticking. 
Freezing Instructions: After cooking, cool the chicken bites and spread them on a tray to freeze until solid, so they don’t stick together. Then, put them in a freezer bag or container, remove the air, and freeze. They can be kept for up to 3 months. Thaw them in the fridge overnight or reheat straight from frozen in the air fryer until hot.
