Everything Bagel Green Beans Almondine

An enhanced version of classic green beans almondine. Flavorful fresh green beans, toasted almonds and everything bagel seasoning tossed together to make a much healthier alternative to green bean casserole.

Ingredients

  • 1 pound fresh green beans trimmed
  • 3 tablespoons ghee divided
  • 1 shallot minced
  • ½ cup slivered almonds
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons everything bagel seasoning

Instructions

  • Bring a large pot of water to a boil, then add the green beans. Let cook for 2-3 minutes or until they turn bright green. Immediately remove and place into a bowl of ice water to stop the cooking process. Drain and set aside.
  • Melt half of the ghee over medium heat, then add the slivered almonds and toast in the pan for 2-3 minutes or until they begin to brown. Remove them from the heat and add them to a small bowl along with everything bagel seasoning. Toss the almonds and seasoning together until fully combined. Set aside.
  • In the same skillet melt the remaining ghee over medium heat, then add the chopped shallots. Saute until soft for about 3-5 minutes.
  • Add the lemon juice to the pan along with the blanched green beans. Then, saute the green beans, mixing everything together for 3-4 minutes or until they are warmed through.
  • Place the green beans on a serving dish with tongs, then top with the almonds and everything bagel seasoning mixture. Serve while warm.
