Everything Bagel Green Beans Almondine
An enhanced version of classic green beans almondine. Flavorful fresh green beans, toasted almonds and everything bagel seasoning tossed together to make a much healthier alternative to green bean casserole.

- 1 pound fresh green beans trimmed
- 3 tablespoons ghee divided
- 1 shallot minced
- ½ cup slivered almonds
- 2 tablespoons fresh lemon juice
- 2 tablespoons everything bagel seasoning
Bring a large pot of water to a boil, then add the green beans. Let cook for 2-3 minutes or until they turn bright green. Immediately remove and place into a bowl of ice water to stop the cooking process. Drain and set aside.
Melt half of the ghee over medium heat, then add the slivered almonds and toast in the pan for 2-3 minutes or until they begin to brown. Remove them from the heat and add them to a small bowl along with everything bagel seasoning. Toss the almonds and seasoning together until fully combined. Set aside.
In the same skillet melt the remaining ghee over medium heat, then add the chopped shallots. Saute until soft for about 3-5 minutes.
Add the lemon juice to the pan along with the blanched green beans. Then, saute the green beans, mixing everything together for 3-4 minutes or until they are warmed through.
Place the green beans on a serving dish with tongs, then top with the almonds and everything bagel seasoning mixture. Serve while warm.
