- 1 cup peanut butter
- 1 egg beaten
- 4 tablespoons collagen or gelatin
- 2 teaspoons vanilla extract
- ¼ cup almond flour
- ¼ cup sugar optional
Preheat oven to 350F and lightly grease a cookie sheet.
Add the beaten egg, peanut butter, and vanilla extract to a large bowl. Mix to combine.
Then, add the flour and collagen to the bowl and continue mixing until a dough forms.
Using a cookie scoop or a rounded tablespoon of dough per cookie, roll the dough into a dozen balls and place them on the prepared baking sheet, leaving space in between each. Gently flatten each ball and score with a fork.
Transfer to your preheated oven and bake for 10 to 12 minutes. Keep an eye on them as every oven is different. Slightly underbake them. They will continue to cook while cooling!
Let the cookies rest on the cookie sheet for 10 minutes before transferring to a cooling rack to finish cooling. Enjoy!
