Ingredients

For Mustard Glaze

  • 2 tbsp Dijon Mustard
  • 2 tbsp Coarse Grain Mustard
  • 2 tbsp Brown Sugar
  • 1 tbsp Fresh Rosemary chopped
  • 2 tsp Fresh Garlic minced

Instructions

  • Preheat The Oven and Prep The Ingredients: Preheat your oven to 425 degrees. Cut your potatoes into 1 inch cubes and make sure they are all the same size. Toss green beans and potatoes in a bowl with avocado oil, salt, pepper and garlic powder until evenly combined.
  • Make Mustard Glaze: In a bowl, whisk together dijon mustard, coarse mustard, brown sugar and chopped fresh rosemary until everything is combined. 
  • Prep The Pork Tenderloin: Pat pork tenderloin dry and lightly season with salt and pepper.
  • Assemble The Sheet Pan: Add pork tenderloin in the middle of the sheet pan. Add seasoned green beans and potatoes around it in an even layer. Spoon mustard glaze over the top of the pork tenderloin.
  • Bake: Bake for 30 minutes or until the internal temperature of pork tenderloin reaches 165. This may need more or less time depending on the thickness of the pork tenderloin. Remove and serve hot.
