This easy Keto Green Bean Casserole is a homemade side dish from scratch that goes perfect with any holiday meal. It uses fresh green beans, bacon, mushrooms, and onion tossed with a creamy sauce. It’s then topped with a homemade crunchy topping made of crushed pork rinds, Parmesan cheese and butter and baked until warm and crunchy.

Believe it or not, green bean casserole was created by Campbell’s soup. This popular holiday side dish was made with green beans, fried onions and a can of mushroom soup.

This recipe gives a keto twist on the side dish by using a creamy mushroom and onion sauce made with cream cheese and heavy cream instead and topped with a crunchy low carb topping.

🌿Main Ingredients In Green Bean Casserole

Fresh Trimmed Green Beans – fresh is best! These will be cooked before going into the oven. 3 quick ways to cook your green beans are below. 

Bacon – gives a great smoky flavor to the dish

Mushrooms & Onions – adds a great umami flavor

Cream Cheese & Heavy Cream – a low carb way to make a creamy sauce toss into the cooked green beans

Crushed Pork Rinds – gives a crunchy topping with minimal carbs

Parmesan Cheese – gets mixed into the topping for a salty bite

🏃🏻‍♂️How To Cook Green Beans Fast

Fresh green beans are best in this recipe. Below are 3 of my favorite ways to cook green beans al dente fast!

  • Blanching On Stovetop: drop green beans in a pot of boiling water for 2 minutes. Remove from water and dunk in an ice bath for 2 minutes before removing. 
  • Cooking In Microwave: Place green beans in a microwave safe bowl, add water to bottom and cover with plastic wrap. Microwave on high for 4-5 minutes
  • Instant Pot: place green beans on trivet and add 1 cup of water to the bottom of the instant pot. Cook on low pressure for 0 minutes (yes, zero!) and do a quick release.

📖How To Make Keto Green Bean Casserole

1️⃣ Preheat the oven to 375.

2️⃣ Pre-cook green beans to your liking. You can do this by placing them in boiling water for 2 minutes then dunking them in an ice water bath. Or you could add them to a microwave safe bowl with ¼ cup water, cover the bowl with plastic wrap and microwave for 5 minutes. Or my favorite way is to cook them in the instant pot by placing them on a trivet, adding a cup of water and cooking on LOW pressure for zero minutes with a quick release.

3️⃣ In a large skillet, add avocado oil and heat over medium high heat. Add chopped bacon pieces and begin to cook until the fat begins to render. Add mushrooms, onions, salt and pepper and saute until onions begin to become translucent (about 5-6 minutes).

4️⃣ Add heavy cream and cream cheese to onion and mushroom mixture and combine fully. 

5️⃣ In a large bowl, mix the cooked green beans with the mushroom and onion mixture until all green beans are coated evenly. Pour into a casserole dish.

6️⃣ To make topping: combine crushed pork rinds, melted butter, parmesan cheese and onion powder until a wet crumbly mixture is formed. 

7️⃣ Top green beans evenly with topping.

8️⃣ Bake in the oven for 25 minutes or until the topping becomes golden brown. Serve hot.

🥫Can I Use Canned Green Beans?

Canned green beans can be used in this recipe although not ideal since they are already mushy in texture. To replace fresh green beans with canned green beans, use 2 14.5 oz cans of canned green beans drained. 

Can I Make My Green Bean Casserole Ahead Of Time?

Absolutely! Simply skip the baking step and cover your casserole with plastic wrap tightly. Store in the fridge for up to 3 days until it’s ready to be baked.

Ingredients

  • 2 lbs Green Beans Trimmed
  • 1 cup White Onion sliced
  • 8 oz Mushrooms sliced
  • 4 slices Smoked Bacon chopped
  • 8 oz Cream Cheese softened
  • 2 tsp Avocado Oil
  • 1 tsp Minced Garlic
  • cup Heavy Cream
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Topping:

  • ½ cup Crushed Pork Rind Crumbs
  • 2 tsp Onion Powder
  • 3 tbsp Butter melted
  • ¼ cup Grated Parmesan Cheese
