This easy recipe for Sheet Pan Pork Tenderloin Dinner with vegetables is the perfect winter weeknight meal. Pork, green beans and potatoes are roasted on a sheet pan for a healthy meal in 30 minutes.

One of the best ways to get a healthy meal on the table is to make a sheet pan dinner! You marinate a protein and place it on a sheet pan with vegetables and roast them up until everything is cooked and tender.

This can be done with beef, chicken, seafood or even pork tenderloin which is a healthy high protein meat that is tender and juicy and low in fat.

📝 Ingredients for Pork Loin Sheet Pan Dinner

  • Pork Tenderloin: This is one of the most tender and lean pieces of pork you can buy and is easy to flavor. 
  • Fresh Green Beans: These add a green vegetable to the dish that goes perfectly. Save some time by buying a bag that is trimmed and pre-washed.
  • White Potatoes: For a hearty starch that brings the meal together.
  • Dijon Mustard & Coarse Grain Mustard: The main star of the glaze that goes on top of the pork. 
  • Brown Sugar: Adds a sweet finish to the glaze.
  • Fresh Rosemary: The perfect herb that pairs well with any pork dinner. 
  • Freshly Minced Garlic: Because everything needs garlic!
  • Avocado Oil: To toss the veggies in before seasoning them and adding to the sheet pan.
  • Salt, Pepper & Garlic Powder: Used to season the veggies and pork tenderloin before cooking.

📖 How to Make Sheet Pan Pork Tenderloin

1️⃣ Preheat The Oven and Prep The Ingredients: Preheat your oven to 425 degrees. Cut your potatoes into 1 inch cubes and make sure they are all the same size. Toss green beans and potatoes in a bowl with avocado oil, salt, pepper and garlic powder until evenly combined.

2️⃣ Make Mustard Glaze: In a bowl, whisk together dijon mustard, coarse mustard, brown sugar and chopped fresh rosemary until everything is combined. 

3️⃣ Prep The Pork Tenderloin: Pat pork tenderloin dry and lightly season with salt and pepper.

4️⃣ Assemble The Sheet Pan: Add pork tenderloin in the middle of the sheet pan. Add seasoned green beans and potatoes around it in an even layer. Spoon mustard glaze over the top of the pork tenderloin.

5️⃣ Bake: Bake for 30 minutes or until the internal temperature reaches 165. This may need more or less time depending on the thickness of the pork tenderloin. Remove and serve hot. 

🧑‍🍳 Chef’s Tips

Make sure the potatoes are are all roughly cut the same size to insure even cooking. 

Pork Tenderloin Sizes: Sometimes pork will come in a pack of 2 tenderloins instead of one big one. This may need 5-10 minutes less cooking time. It’s best to invest in a kitchen thermometer to ensure food safety when cooking pork or any other meats.

The beauty of this dish is that you can change up the vegetables and customize it to whatever your family will enjoy. Just make sure everything is cut relatively the same size so that it cooks evenly. Some vegetable swap suggestions:

How to Make a Whole30 Pork Tenderloin Dinner

To make this recipe Whole30 compliant, simply leave the brown sugar out of the mustard glaze. Also, check your condiment labels to make sure there are no ingredients that contain sugar or any ingredients that are non-compliant.

  • 2 lb Pork Tenderloin
  • 12 oz Fresh Green Beans trimmed
  • 1.5 lb Russet Potatoes large diced
  • 1 tbsp Avocado Oil
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • ¼ tsp Garlic Powder
