I’m really picky about my breakfast sausage. The flavor has to be breakfast-y but not sweet and the texture cant be too soft or under cooked. I’ve tried many in my life and there are very few that seal the deal with me. Eating breakfast sausage on a Whole30 is even harder as most store bought sausages contain sugar or sweetener which is a no-go.
So therefore, the only option was to obviously make it myself so it could be juuuust right. I do have a secret ingredient that made making these sausage a breeze: Poultry Seasoning
Poultry seasoning has the PERFECT amount of comfort flavors all in one place and actually makes an amazing sausage flavor when its paired with fennel seed. Typically in poultry seasoning you’ll find a blend of: rosemary, thyme, marjoram and sage. And Bonus, it could be use to season any chicken or turkey and makes for an excellent comforting bone broth.

All you need to do is mix your meet with poultry seasoning, fennel seed, salt and pepper, form into patties and cook until desired tenderness. This easy breakfast sausage can be made using beef, pork, or a mixture of both.

Ingredients
- 1 lb Ground Pork
- 2 tsp Poultry Seasoning
- 1 tbsp Fennel Seed
- ⅛ tsp Cayenne Pepper (optional)
- 2 tsp Avocado Oil
- Salt/Pepper to taste
Instructions
- Combine ground pork with all spices until they are mixed throughout. Do not over mix as meat will become tough.
- Form into flat round patties that are about ¼ inch thick.
- Heat oil in skillet over medium high heat and cook the patties about 2-3 minutes on each side until cooked through.
