Baked Miso Butterfish
This easy baked miso butterfish yesterday is the best way to enjoy black cod hands down. Simply mix a miso marinade with orange juice, soy sauce and mirin, spread it on top of the fish and broil it to perfection. A great recipe to entertain with that can be paired with bok choy, snap peas, and rice.
Although this dish was popularized by the famous Japanese restaurant Nobu, this amazing fish dish was something we became acquainted with when we lived in Hawaii.
Seafood in Hawaii is hands down the most fresh and tasty and so any seafood restaurant was usually bound to be a hit.
One place we frequented was called Uncles Fish Market and the best Miso Butterfish in hawaii that our roommate ordered every single time and for good reason!
I was able to get my hands on some beautiful Alaskan wild butterfish to recreate this dish that brings us happy memories. This recipe is made without Sake.
💭What Is Butterfish?
Butterfish commonly goes by 3 different names including black cod and sablefish. The difference between black cod and regular cod is that butterfish tastes like a velvety soft buttery fish while cod is a bit more dry and flaky.
Butterfish naturally has a higher fat content which accounts for the difference in taste.
🐟Ingredients You’ll Need To Make Miso Butterfish
Butterfish Filets: These can be found in some special seafood markets, or you can order them online and get them straight to your door through Sitka Salmon Shares. More info on ordering below!
White Miso Paste: This gives the fish a salty sweet bite that is unforgettable.
Mirin: A sweetened rice wine vinegar is a perfect compliment to miso and absolutely a must in this recipe.
Fresh Orange Juice: Adds a pop of freshness to the fish that pairs well with sablefish
Soy Sauce or Coconut Aminos: Gives a salty umami bite to the marinade.

📖How To Prepare And Cook Butterfish
1️⃣ Prepare & Preheat the Oven: Move the top rack so it is 3-4 inches away from the heat source and set to BROIL.
2️⃣ Prepare The Marinade: In a small sauce pot, whisk together miso, mirin, orange juice and soy sauce until fully combined. Turn on heat to medium low and heat up until just before it starts to boil while stirring occasionally. Once it is almost boiling, remove from heat.
3️⃣ Prepare The Butterfish: Pat your butterfish fillets dry with a paper towel and place them on a parchment lined baking sheet skin side down. Evenly distribute miso marinade on top of the fish in a thick layer.
4️⃣ Bake Butterfish: Place marinated black cod into the oven and broil for 10-12 minutes or until fish is fully opaque and cooked through. Thin fillets need about 10 minutes while thicker ones need about 12-15 minutes. Remove from the oven and serve hot.
❔FAQ
Although each texture will be different, you can try making this recipe with sea bass, salmon or regular cod.
These items can be found in your local asian grocery store or in the ethnic section of your local grocery store.
For thick filets that are 5-6 ounces, cook for 12-15 minutes. For thin pieces, cook for 10 minutes. A kitchen thermometer is recommended to make sure the internal temperature of the fish reaches 165 degrees F.
It is recommended that prepared fish be eaten right away. Otherwise it can last up to 2 days in the fridge in an airtight container.
You can freeze cooked butterfish but it will lose a lot of it’s texture and may become mushy when defrosted. Once defrosted, it must be eaten within 24 hours.
