Grilled Potato Salad

I’ve always thought that grilling potatoes would not be an easy task, turns out it’s one of the BEST ways to enjoy potatoes if you use this recipe featuring a warm bacon mustard vinaigrette that everyone will love.
🥔Ingredients You’ll Need
- Golden Potatoes – These are my absolute favorite potatoes because they are naturally buttery and soft on the inside. This makes them a great potato to grill because they cook pretty quickly.
- Coarse Grain Mustard – This is what makes the potato salad dressing perfect for potatoes without having too much of a mustard flavor. Grab the mustard from The New Primal or try this one.
- Apple Cider Vinegar – Adds a great tang to the dressing that is slightly sweet.
- Olive or Avocado Oil – Helps bring together the vinaigrette so it gets evenly coated with the dressing
- Chopped Green Onion – A great garnish for this dish that also adds a nice pop of fresh color.
- Salt, Pepper, Garlic Powder – A must to season up this unique side dish

📖How To Make Grilled Potato Salad
1️⃣ Preheat Your Gas Grill: Turn on your gas grill and heat it up until temperature stays around 350-400 degrees.
2️⃣ Prepare Your Potatoes: Wash golden potatoes and slice into thin ¼” inch rounds. This can be done using a sharp knife or a mandolin. Toss with 2 tbsp olive or avocado oil.
3️⃣ Prepare Marinade: In a large bowl, whisk together remaining olive oil, apple cider vinegar, coarse grain mustard, salt, pepper, garlic powder until combined.
4️⃣ Grill Potatoes: Place potatoes on a preheated grill and cook for 3-4 minutes on each side. Make sure you are monitoring the temperature to make sure the slices do not burn. Remove once potato rounds are cooked through the center.
5️⃣ Serve: Toss in prepared marinade. Garnish with chopped green onion and serve warm. For an extra boost of flavor, top with some crumbled cooked bacon!

Grilled potato salad will last in the fridge for up to 3-4 days in a covered sealed container. To reheat grilled potato salad, microwave or spread out on a sheet pan and warm in a 325 degree oven for 15-20 minutes or until warmed through.
Grilled potatoes taste best when placed right on the grill without any barrier. Foil is best used when u0022bakingu0022 a full potato on the grill. Alternatively, you could also use a grill pan to make this recipe.
Since these potatoes are cut into 1/4u0022 thin rounds, they do not need to be soaked before they are tossed in oil and placed on your preheated grill. Soaking potatoes in water removes some of the starch which is best when cooking potatoes in an oven where there is more even and dry heat.
Personally, I believe that the best potatoes for grilling are Yukon gold potatoes because of how naturally buttery and soft they are. They cook pretty quickly on the grill and have a wonderful flavor. You could also use red potatoes as an alternative.
