Dill Pickle Coleslaw

Dill Pickle Coleslaw is a fun twist on classic coleslaw that is a perfect side dish for warmer seasons. Simply make a coleslaw dressing with pickle juice, fresh dill, mayo and chopped dill pickles then mix with a cold and crunchy coleslaw blend of shredded cabbage and carrots. This recipe is Whole30 and can easily become a keto or sugar free coleslaw with a simple ingredient swap. 

🥒Ingredients For Dill Pickle Coleslaw

Coleslaw Mix or Shredded Cabbage: Coleslaw mix is made of shredded cabbage, usually both purple and green as well as shredded carrots. You could use just shredded cabbage, but the mix is more colorful and crunchy. 

Mayonnaise: Used in the making of any classic coleslaw dressing. Use store bought or make this easy one minute mayonnaise recipe.

Chopped Dill Pickles: Adds a tangy crunch throughout the coleslaw. 

Pickle Juice: Add this straight from the jar! This will soak into the coleslaw mix for a nice pickle flavor. 

Fresh Dill: This herb really adds another level of flavor that compliments the pickle flavor. 

Sugar or Sweetener: Traditionally, coleslaw has a slightly sweet taste to it which definitely works in this recipe. You could use regular sugar or a sugar substitute if you have dietary restrictions. 

Garlic Powder, Salt & Pepper: Adds flavor to this summer side dish. 

📖How To Make Dill Pickle Coleslaw

Add Ingredients To A Bowl: In a large bowl, add coleslaw mix, chopped dill pickles, pickle juice, mayo, dill, salt, pepper and garlic powder.

Toss Until Combined: Toss everything together until fully combined. If you enjoy a stronger pickle or dill flavor, feel free to add in more chopped pickles or fresh dill.

Chill In Fridge: Before serving, chill coleslaw in the fridge for about 2 hours to let all the flavors marinate. This is why making coleslaw ahead of time is the best way to do it. Serve cold. 

Can I Make Coleslaw In Advance?

Coleslaw can be made in advance about 2 hours. This will give all of the flavors time to marinate and still stay crunchy.

Coleslaw can get watery because the dressing contains salt that pulls the water and moisture out of the coleslaw and carrots. It is recommended that you serve coleslaw the day it’s made in order for it to stay crunchy and fresh.

🥑Keto or Sugar Free Dill Pickle Coleslaw

If you are on a sugar free or keto diet, you can absolutely still make this coleslaw. Simply swap out the white granulated sugar with a sugar substitute such as Erythritol or a Monkfruit Sweetener.

  1. This sounds delicious! Any suggestions for a mayo replacement in these types of salad recipes? Egg allergy. 😕 Ana I’m not a fan of vegan mayo.
