These raspberry lemonade electrolyte gummies are easy to make, are packed with protein and keto and kid friendly! 

I’m a huge fan of electrolytes.

I know . . . it’s a very strange thing to be a fan of, but it’s true!  We’re told to drink a TON of water each day and I learned the hard way that JUST drinking a ton of water does not mean you’re actually hydrating yourself.

You actually need ELECTROLYTES to balance out the water that stays in your body and without that, you’re really just pissing all your effort away . . . literally. 

There are a lot of ways you can get electrolytes into the body, but these raspberry lemonade gummies not only use an electrolyte supplement but they also pack a high protein and collagen punch by using gelatin. Kids, adults and skeptical husbands love them and you can make them in a variety of flavors depending on which electrolyte powder you decide to use.

What are electrolytes?

Electrolytes are minerals that have an electric charge. They help keep the body’s fluid in balance. Electrolyte minerals are:

  • Magnesium
  • Potassium
  • Sodium
  • Calcium

How do I make electrolyte gummies?

To make electrolyte gummies, you’ll need electrolyte powder, gelatin, water, the juice from one lemon and a silicone mold or silicone muffin tins. 

First, add 1 cup of water to a small sauce pan and sprinkle 2 tablespoons of gelatin in making sure none of it clumps. This helps the gelatin to “bloom” and will seem grainy at first, but whisk it until fully combined.

Next put the water and gelatin over low heat and keep whisking until gelatin fully dissolves into a clear liquid. It is important that the water is hot but not boiling.

Next, add gelatin liquid to a 2 cup measuring cup and whisk in the juice of one lemon and one scoop of electrolyte powder until fully combined.

Pour and portion into preferred silicone mold, and set in fridge for at least one hour before popping out of the molds and enjoying.

Store raspberry lemonade electrolyte gummies in fridge for up to 2 weeks.

What electrolyte supplement powder can I use? 

There are many electrolyte powder supplements you can use, I prefer Ultima Replenisher in either raspberry or pomegranate cherry, but here are some others you could use:

  • Ultima Replenisher – Raspberry
  • Ultima Replenisher – Variety Flavor Pack
  • Keto Vitals Electrolyte Powder – Mango
  • Dr. Bergs Electrolyte Powder
  • Vega Electrolyte Powder

What is gelatin and which one do I buy?

Gelatin is a water soluble protien that is derived from collagen.  Once gelatin is mixed into hot water and cooled, it turns into a jello texture. 

IMPORTANT: Collagen peptides are NOT the same as gelatin.  Collagen peptides is processed in a way that will dissolve in hot AND cold liquid and will NOT produce the jello effect. 

The best collagen gelatin to buy:

Great Lakes Gelatin (the ORANGE canister)

Vital Proteins (the GREEN canister) 

Silicone Molds:

You can use any silicone mold you like for making electrolyte gummies.  I purchased my regluar square one at a craft store in the baking section, but they can easily be purchased online.

Before I purchased my silicone mold that I used now, I used silicone muffin tins I had laying around.

If you have another flavor of electrolyte powder, simply omit the lemon juice and continue on with the recipe!

The idea of a paleo brownie is interesting, isnt it?

Although paleo brownies and sweets are made with natural ingredients, there is no way in HELL people in our ancestral times were chowing down on brownies.

The good news is, our generation CAN eat paleo chocolate brownies.  We’re able to take simple ingredients and not chemicals to turn them into a delicious chocolate treat without any gluten.

These paleo brownies have a little twist by being sprinked with some high quality salt. The combination of salted chocolate is too amazing to pass up.

It’s the reason that chocolate covered pretzels are so addicting and also the reason that chocolate covered bacon is a thing. I’m down.

These salted chocolate paleo brownies are made with almond flour, cocoa powder, coconut sugar and coconut oil and are naturally gluten free, dairy free and refined sugar free. This paleo chocolate brownie recipe is the perfect healthy treat.

How do you make a Paleo Brownie?

The instructions for making a paleo brownie recipe are the same as a regular brownie recipe but with some simple ingredients swaps. 

You’ll take a dry mix of almond flour, cocoa powder, baking powder, coconut sugar, gelatin and salt and whisk it in a bowl.

In another bowl, you add your wet ingredients like your egg and coconut oil.

Once you combine these together, fold in paleo or dairy free chocolate chips then pour the batter into a pan for baking.

Add finishing salt on top and bake until they are gooey chocolate brownies. 

Are Paleo Brownies Healthy?

This is a loaded question in my opinion. Health means so many different things to every different person. 

While you could say that a salted chocolate paleo brownie isn’t “healthy” it is arguably more healthy in terms of the ingredients in the recipe.

This means if it were to be in a health contest between it and a boxed brownie mix, the paleo brownie would probably win.

But, to each their own! 

What kind of salt do you use for Salted Chocolate Paleo Brownies?

You want to make sure you are using a high quality sea salt. You can definitely taste the difference!

My favorite finishing salt of all time is Maldon Sea Salt flakes.  They make all food taste amazing and they are incredibly picturesque!

Ingredients

Dry Ingredients:

  • 1 cup Almond Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 2/3 cup Coconut Sugar
  • 1 tbsp Gelatin
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder
  • 1 tbsp Finishing Salt (Maldon)
  • 2/3 cups Chocolate Chips (Enjoy Life Brand)

Wet Ingredients:

  • 3 Eggs
  • 1/3 cup Coconut Oil, melted
  • 1/2 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350 degrees
  2. Line an 8×8 baking pan with parchment paper and set aside
  3. In a large bowl whisk together the wet ingredients (eggs, coconut oil and vanilla extract)
  4. In another bowl whisk together all dry ingredients (coconut sugar, almond flour, cocoa powder, baking powder, salt, gelatin)
  5. Add the dry ingredients to the wet ingredients in 1/2 cup batches stirring carefully until all ingredients are fully combined.
  6. Fold in chocolate chips
  7. Pour batter into parchment lined baking pan and spread evenly.
  8. Sprinkle with finishing salt
  9. Bake for 22-25 minutes
  10. Let cool completely before cutting and serving
  11. Will keep in an air tight container for up to 5 days

With age comes wisdom in all areas, but it also comes with the likes of food you didn’t like as a kid?

Am I right?

I used to hate things like asparagus, pork chops and was so afraid of cilantro tasting like soap that I avoided it all together.  Sadly, I shunned of white chocolate too and what a shame that was. 

These days I feel myself gravitating towards white chocolate. It has such a creamy light taste that I really enjoy.  I guess all this time using raw cacao butter has paid off and is starting to turn me into a white chocolate monster.

But then, pairing it with peanut butter makes it a devilish combination. This gooey blondie recipe makes the best blondies ever.

What is the difference between a brownie and a blondie?

A blondie is a rich, sweet dessert bar. It resembles the traditional chocolate brownie, but substitutes vanilla for the cocoa used in brownies, and contains brown sugar. Blondies are made from flour, brown sugar, butter, eggs, baking powder, and vanilla, and may also contain walnuts or pecans. SOURCE: Wikipedia

How do you bake a blondie?

A blondie is baked the same way a brownie would be baked except it doesn’t have any cocoa powder.

Simply mix the wet ingredients together such as peanut butter, eggs and butter.

Then add the dry ingredients which are brown sugar, salt, flour and baking powder.

After that, fold in the white chocolate chips and pour into an 8×8 pan to be baked at 350.

Recipe Tips

  • This recipe is made gluten free by using a gluten free flour blend.  If you are using gluten free flour, make sure you by a mix with Xanthan gum. Xanthan gum is a natural binder in gluten free baking.
  • Greased parchment paper is a must when making these brownies. Make sure you line your baking sheet with parchment paper and grease it with butter or oil to keep the blondies from sticking.
  • It is VERY important to make sure that the white chocolate peanut butter blondies are fully cooled for at least 45 minutes before lifting them out of the baking pan, cutting and serving.  If they are still cooling, they may not have time to bind together and will crumble apart
  • Any peanut butter can be used for this recipe.  I used an extra chunky peanut butter.

  • 1 stick Butter (1/2 cup)
  • 1/2 cup Peanut Butter
  • 1 1/2 cups Light Brown Sugar
  • 2 Eggs
  • 2 cups Gluten Free Flour Blend
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup White Chocolate Chips

Instructions

  1. Preheat oven to 350 F
  2. Line an 8X8 pan with parchment paper and grease with oil or butter
  3. Melt the butter in microwave or stovetop and whisk in egg, peanut butter and brown sugar. This can be done in a stand mixer as well. Make sure mixture is fully combined.
  4. Stir in flour, salt and baking powder in 1/2 cup increments until brownie batter until all ingredients are evenly combined.
  5. Fold in white chocolate chips
  6. Spread blondie batter into greased 8X8 pan making sure it is spread out even
  7. Bake for 45 minutes
  8. Once you remove blondies from the oven, make sure they cool completely in the pan for at least 45 minutes. If they are still warm once they are removed they may crumble apart as they did not have enough time to set.
  9. Cut and serve.
  10. Store in an airtight container for up to 5 days.
